I was terrified the first time but yes absolutely - slow cookers are designed specifically for this. Mine runs at low consistent temperature that can't burn food or start fires under normal use. I make sure it's on a stable counter away from curtains not under cabinets where heat builds up and never filled past the 3/4 line. Modern slow cookers have safety shutoffs if they overheat. Literally millions of people do this daily without issues including me for 5 years now. The whole point of a slow cooker is unattended cooking so I can work all day and come home to dinner ready.
LOW runs around 200°F and takes 7-9 hours while HIGH runs at 300°F and takes 3-5 hours. LOW is way better for tough meats because slow collagen breakdown makes them tender while HIGH can make meat tough. For soups and stews either works fine. The general rule is LOW for 8 hours equals HIGH for 4 hours but LOW gives better texture for meat. If I'm home and can monitor it for 4 hours I use HIGH but if I'm working 8-10 hours LOW is perfect. My timer tracks either way.
